Hawker style fried carrot cake just for one.

In January 2020,  I left my home (Sabah) for a working holiday in Singapore but unfortunately not long after, Covid 19 became a pandermic. Now nobody is able to fly until further notice. The whole World is suffering, so much is now affected by this disease, from jobs to  business's, ALL!

Early April 2020, Singapore started the circuit breaker (something like lock down as in Malaysia and many countries) for 3 months due to Covid 19. The word Essential and Non-Essential services surfaced. Everyone was advised to stay home as much possible to avoid the risk of contact and spread. In Singapore the situation is still under control even though the number increases due to the poor sanitation of Indian workers in their dormitories.

During this time, only essential places can operate. This includes, medical, supermarkets and transport while the rest, considered as Non essential were closed down until further notice. Anyone breaking the rules will be heavily fined.

During this time, I created a few self activities to entertain myself. Like most of them did, watching dramas in Netflix, Viu and many more๐Ÿ˜…. Initially it's ok but as time goes by, it’s getting harder to just stay confine to your room, watching dramas. So I started to do some indoor planting with onions and sweet potatoes. When they sprout out their leaves, I was so excited and happy to see some greens at my accommodation. Living in flats like Singapore, is difficult to plant any thing at the corridor as the management will fine us๐Ÿ˜”. But I won’t let that stop me for create other ways to amuse and entertain myself. 

I began to make myself busy which did help to overcome the feeling of being a prisoner in your own home. So, I started to do some simple dishes and as time goes by, life gets easier of being confined to your place. I started to cook many simple dishes just for one and one of them is Hawker style Fried carrot cake. The portion is small because it’s just for one!๐Ÿ˜‚.

And while I create those activities, I took this opportunity to put them in my blog while I was in Singapore๐Ÿ˜‚.

 

 

Carrot cake from supermarket 240 gm (small) S$1.60 from Seng Siong Supermarket. In Sabah, you can’t find this ready-made carrot cake, therefore to make fried carrot cake, you need to make the steamed carrot cake a day early before you can make this dish.

Ingredients:

Carrot cake (bought it at Seng Siong supermarket)- use 1/2 packet for 1 person. cut the cake into cubes.

1 tablespoon preserved radish (chye poh)

2 pip garlic -smashed and chopped.


1 egg - beaten

 


1 tablespoon sweet sauce

1 tablespoon light soy sauce ( depending on your taste)

2 tablespoon cooking oil

Chopped Spring onion for garnishing


Method

 

1.      Heat oil in saucepan


2. Add chopped garlic and saute till lightly brown.



3.      Add cubes of carrot cake and fry in medium heat.

 

4.    4.  Put aside the carrot content, and add preserved radish on the other half of the saucepan and saute till lightly brown.

 

5.    Mixed well in the saucepan.

 
 

6.      Add Light soy sauce and then sweet sauce .

 7. Stir for 1 min


8. Add beaten eggs and stir fried for a min


8. Garnish with spring onions.

9. Serve hot with Kopi O Kosong (Traditional coffee without sugar). Looks good, smells good and taste good too....at least to me!๐Ÿ˜œ

 

Kopi O Kosong was my father's favorite when he was still in this world.๐Ÿ’“

I find that Kopi O goes along well with this dish because the bitterness of the coffee washes away the oily content in our mouth and a friend of mine said the same. ๐Ÿ˜
